- 1 cup wild rice
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1/4 cup chopped green onions
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water.
- Cook the wild rice according to package instructions until tender.
- In a large bowl, combine the cooked wild rice, cranberries, almonds, and green onions.
- In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
