Description

A light and rustic Tomato Basil Galette that combines fresh tomatoes and basil in a flaky pastry crust.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 68 tablespoons ice water
  • 2 cups fresh tomatoes, sliced
  • 1 cup fresh basil leaves
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface into a circle about 12 inches in diameter.
  5. Transfer the dough to a baking sheet lined with parchment paper.
  6. Layer the mozzarella cheese, followed by the sliced tomatoes and basil on the dough, leaving a 2-inch border.
  7. Fold the edges of the dough over the filling, pleating as necessary.
  8. Drizzle olive oil over the top and season with salt and pepper.
  9. Bake for 30-35 minutes or until the crust is golden brown.
  10. Let cool slightly before slicing and serving.
