Description
A light and rustic Tomato Basil Galette that combines fresh tomatoes and basil in a flaky pastry crust.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 6–8 tablespoons ice water
- 2 cups fresh tomatoes, sliced
- 1 cup fresh basil leaves
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the dough on a floured surface into a circle about 12 inches in diameter.
- Transfer the dough to a baking sheet lined with parchment paper.
- Layer the mozzarella cheese, followed by the sliced tomatoes and basil on the dough, leaving a 2-inch border.
- Fold the edges of the dough over the filling, pleating as necessary.
- Drizzle olive oil over the top and season with salt and pepper.
- Bake for 30-35 minutes or until the crust is golden brown.
- Let cool slightly before slicing and serving.
Notes
- Feel free to add other vegetables like zucchini or bell peppers.
- Serve warm or at room temperature.
- This galette can be made ahead of time and reheated.
