- 2 tablespoons red curry paste

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and grated ginger, cooking for another minute.
- Add chicken thighs to the skillet and brown on both sides.
- Mix in red curry paste, coconut milk, lime juice, salt, black pepper, and cayenne pepper.
- Bring to a simmer, cover, and cook for 20-25 minutes until chicken is cooked through.
- Garnish with fresh cilantro before serving.
