- 1 lb chicken breast, diced
- 1 cup salsa verde
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup corn, frozen or canned
- 1 cup black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat a little oil over medium heat and add the diced chicken. Cook until browned and cooked through.
- Add the salsa verde, rice, chicken broth, corn, black beans, cumin, garlic powder, salt, and pepper to the skillet.
- Stir to combine and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve.
Notes
- For extra flavor, marinate the chicken in salsa verde for a few hours before cooking.
