Ingredients

  • 1 lb chicken breast, diced
  • 1 cup salsa verde
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat a little oil over medium heat and add the diced chicken. Cook until browned and cooked through.
  2. Add the salsa verde, rice, chicken broth, corn, black beans, cumin, garlic powder, salt, and pepper to the skillet.
  3. Stir to combine and bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  5. Remove from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork, garnish with fresh cilantro, and serve.
