Ingredients

- 2 medium sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1 avocado, sliced
- 1 cup black beans, rinsed and drained
- 1/2 cup feta cheese, crumbled
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
- Warm the corn tortillas in a skillet or microwave.
- Assemble the tacos by adding roasted sweet potatoes, black beans, avocado slices, and feta cheese to each tortilla.
- Garnish with fresh cilantro and serve immediately.
Notes
- For a spicier kick, add jalapeños or hot sauce.
- These tacos can be made vegan by omitting the feta cheese.
- Leftover sweet potatoes can be stored in the refrigerator for up to 3 days.
