- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons lemon juice
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the chickpeas on a baking sheet and roast for 25-30 minutes until crispy.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado.
- Add the roasted chickpeas to the salad.
- Drizzle with lemon juice and toss gently to combine.
- Top with feta cheese and fresh herbs if desired.
