- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1/4 cup heavy cream
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, butter, powdered sugar, and salt until crumbly.
- Add egg yolk and mix until dough forms.
- Press the dough into tart pans and bake for 15 minutes.
- In a saucepan, whisk together cream, sugar, and cornstarch.
- Gradually add milk and cook over medium heat until thickened.
- Stir in vanilla extract and let cool.
- Fill the cooled tart shells with the vanilla custard.
- Top with fresh raspberries before serving.
Notes
- Make sure to let the custard cool completely before filling the tarts.
- For a sweeter taste, you can add more sugar to the custard.
- These tarts can be made a day in advance and stored in the refrigerator.
