Description

A refreshing and nutritious salad made with quinoa, black beans, and corn, perfect for a light meal or side dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy.
  4. In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  6. Add the cooked quinoa to the vegetable mixture and pour the dressing over it.
  7. Toss everything together until well combined.
  8. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Can be served cold or at room temperature.
  • Great for meal prep; keeps well in the fridge for up to 3 days.
