Description
A refreshing and nutritious salad made with quinoa, black beans, and corn, perfect for a light meal or side dish.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and water; bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy.
- In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Add the cooked quinoa to the vegetable mixture and pour the dressing over it.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Can be served cold or at room temperature.
- Great for meal prep; keeps well in the fridge for up to 3 days.
- Feel free to add avocado or other vegetables as desired.
