- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree
- 1/2 cup brewed coffee
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugars, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, mix the pumpkin puree, brewed coffee, vegetable oil, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter muffin, add chocolate chips or nuts.
- Store leftovers in an airtight container for up to 3 days.
- These muffins can be frozen for up to 2 months.
