Delicious and creamy pumpkin cheesecake bars that are perfect for fall gatherings and celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  3. In a large bowl, beat the cream cheese until smooth. Add the pumpkin puree, powdered sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  4. Pour the pumpkin cheesecake mixture over the crust in the baking dish.
  5. Bake for 30-35 minutes, or until the center is set and the edges are lightly browned.
  6. Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
  7. Serve chilled and enjoy!

Notes

  • For a spicier flavor, add more cinnamon or a pinch of cloves.
  • These bars can be made a day in advance for convenience.
  • Top with whipped cream for an extra treat!
