Ingredients

  • 2 cups of potatoes, diced
  • 1 cup of green beans, trimmed
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes.
  2. Add the green beans to the pot and cook for an additional 3-5 minutes until bright green and tender.
  3. Drain the potatoes and green beans and let them cool.
  4. In a large bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  5. Add the cooled potatoes, green beans, and red onion to the bowl and toss to combine.
  6. Garnish with fresh parsley before serving.
