A delicious and refreshing Potato & Green Bean Salad that is perfect for any occasion.
Ingredients

- 2 cups of potatoes, diced
- 1 cup of green beans, trimmed
- 1/4 cup of red onion, finely chopped
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the diced potatoes in salted water until tender, about 10-15 minutes.
- Add the green beans to the pot and cook for an additional 3-5 minutes until bright green and tender.
- Drain the potatoes and green beans and let them cool.
- In a large bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
- Add the cooled potatoes, green beans, and red onion to the bowl and toss to combine.
- Garnish with fresh parsley before serving.

- This salad can be served warm or cold.
