Ingredients

  • 1/2 cup nut butter (peanut or almond)
  • 1/3 cup honey or maple syrup
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips or dried fruit
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. In a large bowl, combine rolled oats, nut butter, honey or maple syrup, ground flaxseed, chocolate chips or dried fruit, vanilla extract, and cinnamon.
  2. Mix until all ingredients are well combined.
  3. Refrigerate the mixture for about 30 minutes to make it easier to handle.
  4. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  5. Store the energy bites in an airtight container in the refrigerator for up to a week.
