  • 1 cup fresh peaches, sliced
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a separate bowl, combine the sliced peaches, brown sugar, and lemon juice.
  7. Grease a muffin tin and spoon the peach mixture into the bottom of each cup.
  8. Top the peaches with the cookie batter, filling each cup about 2/3 full.
