- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh peaches, sliced
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a separate bowl, combine the sliced peaches, brown sugar, and lemon juice.
- Grease a muffin tin and spoon the peach mixture into the bottom of each cup.
- Top the peaches with the cookie batter, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until golden brown.
- Let cool for a few minutes before inverting onto a plate to serve.
Notes
- For best results, use ripe but firm peaches.
- These cookies can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
