A delicious and easy-to-make Mexican casserole that is perfect for a quick dinner.

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup salsa
- 6 tortillas, cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
- In a baking dish, layer half of the tortilla strips, followed by half of the beef mixture, half of the salsa, and half of the cheese.
- Repeat the layers with the remaining ingredients.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables to the casserole.
- This dish can be made ahead of time and stored in the refrigerator.
- Top with sour cream or avocado for extra flavor.
