Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 cup hummus
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. Fluff the couscous with a fork and let it cool.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.
  5. Add the cooled couscous to the vegetable mixture.
  6. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  7. Toss everything together until well combined.
  8. Serve the couscous mixture in bowls and top with a generous scoop of hummus.
