A delicious and healthy Mediterranean Couscous Bowl topped with creamy hummus, perfect for a light meal or a side dish.
Ingredients

- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1 cup hummus
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a saucepan, bring the vegetable broth to a boil.
- Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and let it cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.
- Add the cooled couscous to the vegetable mixture.
- Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Toss everything together until well combined.
- Serve the couscous mixture in bowls and top with a generous scoop of hummus.
Notes
- Feel free to add grilled chicken or chickpeas for extra protein.
- This dish can be served warm or cold.
