Meatball Lasagna Roll-Ups are a delicious twist on traditional lasagna, featuring rolled pasta filled with meatballs and cheese, baked in marinara sauce.


Ingredients

  • 12 lasagna noodles
  • 1 pound ground beef
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix ground beef, ricotta cheese, egg, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Take a lasagna noodle, place a portion of the meat mixture on it, and roll it up.
  6. Place the rolled noodle seam-side down in the baking dish.
  7. Repeat with remaining noodles and meat mixture.
  8. Pour remaining marinara sauce over the roll-ups and sprinkle with mozzarella and Parmesan cheese.
  9. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
  10. Let cool for a few minutes before serving.

Notes

  • Feel free to add vegetables like spinach or mushrooms to the meat mixture for added nutrition.
  • These roll-ups can be made ahead of time and stored in the refrigerator before baking.
