A delicious and hearty Loaded Nacho Tater Tot Casserole that combines crispy tater tots with flavorful nacho toppings, perfect for entertaining guests.

- 1 bag (32 oz) frozen tater tots
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup sliced jalapeños
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning to the beef and mix well, following package instructions.
- In a large baking dish, layer half of the tater tots on the bottom.
- Spread the seasoned beef over the tater tots.
- Add black beans, corn, and diced tomatoes on top of the beef.
- Sprinkle half of the cheddar cheese over the mixture.
- Layer the remaining tater tots on top, followed by the rest of the cheese and jalapeños.
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and the cheese is bubbly.
- Remove from the oven and let cool slightly before serving. Top with sour cream and green onions.
Notes
- Feel free to customize with your favorite nacho toppings.
- For a vegetarian version, substitute ground beef with a meat alternative.
- Can be prepared ahead of time and baked just before serving.
