Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups kale, chopped
  • 2 carrots, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in the carrots and cook for a few more minutes.
  4. Add vegetable broth, cannellini beans, thyme, and smoked paprika.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add chopped kale and cook until wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
