Ingredients

  • 12 jalapeno peppers, finely chopped

Instructions

  1. Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and letting them sit for 12 minutes.
  2. Cool the eggs in ice water, then peel and slice them in half lengthwise.
  3. Remove the yolks and place them in a bowl.
  4. Add mayonnaise, Dijon mustard, chopped jalapenos, lime juice, salt, and pepper to the yolks and mix until smooth.
  5. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  6. Garnish with chopped cilantro before serving.
