Ingredients

- 1 large cucumber
- 4 oz cream cheese
- 1/4 cup Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
- 8 slices of whole grain bread
Instructions
- Wash and slice the cucumber into thin rounds.
- In a bowl, mix the cream cheese, Greek yogurt, dill, lemon juice, salt, and pepper until smooth.
- Spread the mixture evenly on one side of each slice of bread.
- Layer the cucumber slices on half of the bread slices.
- Top with the remaining bread slices, cream cheese side down.
- Cut the sandwiches into quarters and serve immediately.

- For a vegan option, substitute cream cheese with a plant-based alternative.
