Ingredients

  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped

Instructions

  1. Rinse the farro under cold water.
  2. In a pot, combine farro and water, bring to a boil, then reduce heat and simmer for 25-30 minutes until tender.
  3. Drain any excess water and let the farro cool.
  4. In a large bowl, combine the cooled farro, cherry tomatoes, and fresh basil.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or refrigerate for later use.
