Ingredients

- 1 cup farro
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse the farro under cold water.
- In a pot, combine farro and water, bring to a boil, then reduce heat and simmer for 25-30 minutes until tender.
- Drain any excess water and let the farro cool.
- In a large bowl, combine the cooled farro, cherry tomatoes, and fresh basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for later use.

- For added flavor, consider adding feta cheese or avocado.
- This salad can be made a day in advance for better flavor.
