Ingredients

  • 1 cup farro
  • 2 cups water
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Rinse the farro under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the farro. Cook for about 30 minutes until tender.
  3. While the farro is cooking, preheat the grill to medium-high heat.
  4. Toss the zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, salt, and pepper.
  5. Grill the vegetables for about 5-7 minutes until they are tender and have grill marks.
  6. Once the farro is cooked, drain any excess water and let it cool slightly.
  7. In a large bowl, combine the farro and grilled vegetables. Toss gently to mix.
  8. Garnish with fresh basil before serving.
