- 1 pound green beans, trimmed
- 1 pound baby potatoes, halved
- 4 slices of bacon, chopped
- 2 tablespoons ranch seasoning mix
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, bring water to a boil and add the baby potatoes. Cook for about 10 minutes until tender.
- Add the green beans to the pot and cook for an additional 5 minutes.
- Drain the vegetables and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Add the olive oil to the skillet with the bacon drippings.
- Add the drained green beans and potatoes to the skillet, sprinkle with ranch seasoning, and toss to coat.
- Cook for an additional 5 minutes, stirring occasionally, until heated through.
- Stir in the crispy bacon and season with salt and pepper to taste before serving.
Notes
- For a vegetarian version, omit the bacon and use olive oil for flavor.
- Feel free to add other vegetables like carrots or bell peppers for extra color and nutrition.
