- 2 cups fresh corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup milk
- 1 large egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- In a large bowl, combine corn kernels, flour, cornmeal, milk, egg, baking powder, salt, and pepper.
- Add chopped green onions and mix until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
- Remove fritters and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For a spicier version, add diced jalapeños to the batter.
