  • 1/2 cup red bell pepper, thinly sliced

  • 1/4 cup sesame seeds, toasted
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp grated ginger
  • 1 clove garlic, minced

Instructions

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked soba noodles, cucumber, carrots, red bell pepper, and green onions.
  3. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, and minced garlic to make the dressing.
  4. Pour the dressing over the noodle salad and toss to combine.
  5. Sprinkle toasted sesame seeds on top before serving.
  6. Chill in the refrigerator for 15-30 minutes for the best flavor.
