- 8 oz soba noodles
- 1 cup cucumber, julienned
- 1 cup carrots, julienned
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup green onions, chopped
- 1/4 cup sesame seeds, toasted
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 tsp grated ginger
- 1 clove garlic, minced
Instructions
- Cook the soba noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked soba noodles, cucumber, carrots, red bell pepper, and green onions.
- In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, and minced garlic to make the dressing.
- Pour the dressing over the noodle salad and toss to combine.
- Sprinkle toasted sesame seeds on top before serving.
- Chill in the refrigerator for 15-30 minutes for the best flavor.
Notes
- Feel free to add other vegetables like edamame or snap peas for extra crunch.
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
