Description

Ingredients

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Fold in the chopped strawberries and chocolate chips.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely before frosting.
  9. Prepare the chocolate ganache by melting chocolate chips and stirring until smooth.
  10. Dip the tops of the cooled cupcakes in the ganache and top with a fresh strawberry.
