  • ½ cup unsalted butter, melted

  • 1 cup granulated sugar
  • 3 large eggs

  • 3 ripe bananas, sliced
  • ¼ cup brown sugar
  • ¼ cup dark rum
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and granulated sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes or until the center is set.
  7. While the cheesecake is baking, caramelize the bananas in a skillet with brown sugar, rum, and lemon juice over medium heat until golden.
  8. Once the cheesecake is done, let it cool, then top with the caramelized bananas.
  9. Chill in the refrigerator for at least 4 hours before serving.
