- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
- ¼ cup brown sugar
- ¼ cup dark rum
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- While the cheesecake is baking, caramelize the bananas in a skillet with brown sugar, rum, and lemon juice over medium heat until golden.
- Once the cheesecake is done, let it cool, then top with the caramelized bananas.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a non-alcoholic version, omit the rum.
- Ensure the cream cheese is at room temperature for a smoother batter.
- Can be served with whipped cream for extra indulgence.
