- 2 cups water
- 1 cup cherry tomatoes, halved

Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cooled quinoa, cherry tomatoes, mozzarella, and basil.
- In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
- Drizzle the balsamic mixture over the quinoa bowl and toss gently to combine.
- Serve immediately or chill in the refrigerator before serving.
