Ingredients

  • 1 block of firm tofu, pressed and cubed
  • 1/2 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, shredded
  • 1/2 cup celery, diced
  • 4 whole wheat tortillas
  • 1/4 cup ranch dressing (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed tofu in olive oil and buffalo sauce until well coated.
  3. Spread the tofu on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy.
  4. Warm the tortillas in a skillet or microwave.
  5. Assemble the wraps by placing lettuce, carrots, celery, and baked tofu on each tortilla.
  6. Drizzle with ranch dressing if desired, then wrap tightly.
