- 14 oz firm tofu, drained and pressed
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pressed tofu into cubes.
- In a bowl, mix the soy sauce, olive oil, garlic powder, onion powder, salt, and pepper.
- Add the tofu and mushrooms to the bowl and toss to coat.
- Spread the tofu and mushrooms on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until golden brown.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the tofu for 30 minutes before baking.
- Serve with rice or quinoa for a complete meal.
- Feel free to add other vegetables like bell peppers or broccoli.
