- 8 oz rice noodles
- 1 cup shredded carrots
- 1 cup bell peppers, sliced
- 1 cup cucumber, julienned
- 1/2 cup green onions, chopped
- 1/2 cup cilantro, chopped
- 1/4 cup peanuts, chopped
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp ginger, grated
Instructions
- Cook the rice noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked noodles, shredded carrots, bell peppers, cucumber, green onions, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger until smooth.
- Pour the peanut dressing over the noodle and vegetable mixture and toss to combine.
- Top with chopped peanuts before serving.
Notes
- For a spicier kick, add red pepper flakes or sriracha to the dressing.
- This salad can be made ahead of time; just keep the dressing separate until ready to serve.
- Feel free to add protein such as grilled chicken or tofu for a heartier meal.
