Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. In a large bowl, combine the mashed potatoes, shredded cheese, green onions, egg, salt, and pepper.
  2. Mix until well combined.
  3. Form the mixture into small balls, about 1 inch in diameter.
  4. Roll each ball in breadcrumbs until fully coated.
  5. Preheat the air fryer to 375°F (190°C).
  6. Spray the air fryer basket with cooking spray.
  7. Place the potato balls in the basket in a single layer, making sure they are not touching.
  8. Cook for 10-12 minutes, or until golden brown and crispy.
  9. Remove from the air fryer and let cool slightly before serving.
