Ingredients

- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1 egg
- Salt and pepper to taste
- Cooking spray
Instructions
- In a large bowl, combine the mashed potatoes, shredded cheese, green onions, egg, salt, and pepper.
- Mix until well combined.
- Form the mixture into small balls, about 1 inch in diameter.
- Roll each ball in breadcrumbs until fully coated.
- Preheat the air fryer to 375°F (190°C).
- Spray the air fryer basket with cooking spray.
- Place the potato balls in the basket in a single layer, making sure they are not touching.
- Cook for 10-12 minutes, or until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Feel free to add herbs or spices to the potato mixture for extra flavor.
- These can be made ahead of time and frozen before cooking.
- Serve with your favorite dipping sauce.
